Types of Cherries
Bing
Bing is king. At least of cherries. This is the most cultivated variety of sweet cherries the world over. The rich, sweet flavor is balanced by just the right touch of tartness, and the flesh is firm and juicy. Bing cherries are well suited for fresh eating, canning or freezing, and the taste is perfectly paired with many diverse flavors, from almonds to arugula, pork to duck, cheese to chocolate.
Brooks
Brooks is a large, firm red cherry that tolerates hot climates. It has a well-balanced sweetness with both rich complex flavors and a perfectly sweet tart blackberry-like finish.
Coral Champagne
It has very large, red, super sweet fruit that some say is superior to Bing. The flesh is firm but juicy and has a pretty coral pink color. The Coral Champagne Cherry is perfect for kids to pick fruit from because the tree typically grows smaller and more compact than most other varieties.
Lapins
Lapin cherries are incredibly versatile and may be used similarly to Bing cherries. Lapin cherries can be used for jams, tart fillings, dessert toppings or even pickling. Sweeter cherries such as the Lapin are the best choice for preserves or making cherry brandy or infused liqueurs.
Rainier
Rainier cherries are a golden yellow, with pink and red blush over white-yellow flesh. They have the highest of all sugar levels, and as a premium cherry, are used for eating fresh or in desserts. Of course, they also are a delicious choice in desserts. Rainier cherry ice cream, anyone?
Royal Tioga
Royal Tioga was developed in Modesto, California. For an early cherry variety, these are surprisingly dark, rich and packed with tons of flavor.
Sweethearts
They are red to dark red and have a sweet flavour with an excellent texture. This an eating variety of cherry but can also be used used for jams and cooking although it will tend to loose its shape and form.
Tulare
The Tulare cherry is a cousin to the Bing cherry tree, which is one of the most popular cherry trees in the world. Much like Bing cherries, Tulare cherries are widely prized for their sweet flavor, firm texture, and exceptional juiciness.
